*Japanese shrimp history is a blend of ancient culinary tradition and pioneering modern aquaculture technology. Shrimp, known as ebi in Japan, has been a valued delicacy for centuries, often symbolizing longevity due to their long antennae and bent, "old man-like" body, making them a staple in Osechi (New Year) dishes.
